Protein Cottage Cheese Puddin’ Cups

This decadent and delicious pudding cup recipe is made with blended and smooth cottage cheese giving it 40g of protein! It makes a great prepare-ahead breakfast or after dinner sweet treat.
Cottage cheese has quickly become a social media sensation for its low calorie and high protein attributes. Its mild flavor makes it the perfect healthy alternative for many recipes! It can easily be used as a substitution for cream cheese, sour cream and yogurt, but you may have to blend it first to achieve the same smooth texture.

How to Store

You will need to let the pudding sit for at least 4 hours in the fridge or overnight. Consuming between the 4-12 hour mark will provide the best texture. Consume within 24 hours and store any leftovers in the fridge. The fruit topping can last 5-7 days in the fridge in a sealed container.

Ingredients

Pudding:

  • 250g fat free cottage cheese
  • 2 scoops protein powder (vanilla whey, chocolate, oatmeal cookie or peanut butter are best)
  • 70g oats
  • 70ml milk (Use non-dairy milk of your choice, such as; almond, oat or cashew)
  • 2 Tbsp sugar free maple syrup.

Fruit Jam Topping

  • 2 cups frozen berries of your choice (blueberry, strawberry or raspberry work best)
  • 3 Tbsp water + 1 Tbsp set aside
  • 1 tbsp sugar free maple syrup
  • 2 tsp corn starch.

Instructions

  1. Blend the oats until fine in texture. Set aside in a bowl.
  2. Blend the cottage cheese with a splash of water (1 Tbsp) and maple syrup until smooth in texture.
  3. Add the protein powder and oats to the blended cottage cheese mixture and blend until combined.
  4. Pour into serving cups and cover. Chill for 4 hours or overnight.
  5. Add the topping mixture (fruit, 3 Tbsp water and maple syrup) to a saucepan and set heat to medium high. While the mixture is heating, stir regularly to ensure even heat distribution.
  6. While the jam is simmering, combine the cornstarch and remaining water in a separate container and mix well. Once combined, add the mixture to your jam topping and stir continuously until thickened.
  7. Take off heat and set aside to cool. You may want to transfer the mixture to a glass container and set aside on the counter until cooled before moving it to the fridge. Add the topping to the pudding cups just before serving.

Keep adding 1 Tbsp of water to the mixture until you get a smooth texture. Note that the pudding texture comes from the oats absorbing the liquid within the cottage cheese and milk, giving it a thicker consistency.
